CLOS DEL PI
Cabernet Sauvignon, Merlot, Syrah
Harvested from the "Vinya del Pi" end of October, the Cabernet grapes macerate and ferment for 21 days until the sugar is consumed. After the malolactic fermentation, it is aged in French oak barrels for 14 months. Once bottled, it continues to age in the cellars until commercialization.
Cherry red with reflections of terra cotta.
Powerful aromas, refined and persistent. Dominant are nuances of ageing mixed with hints of fruit, originating in the over-ripening of the fruit. Also spices and fragrance typical of Mediterranean undergrowth.
To start, impressive softness of body followed by a tannic structure, creamy and persistent. The aroma in the mouth points to hints of varietal and spices in conjunction with the aroma.
A great wine, excellent aroma, well structured with a good depth and aromatic persistence. Original in its region.
For storing 20 years or more. Worth trying in combination with the great variety of our wise peninsular and Mediterranean cuisine.
