CAVA PERLES ROSES

COMPOSITION
Pinot Noir

PRODUCTION
The Pinot Noir grapes are harvested in early August in boxes to minimize softening. Once in the cellar, they are gently pressed and fermented in stainless steel vats at a low temperature. After the tirage, the second fermentation takes place in glass bottles typical of the méthode champenoise. After aging for a minimum of two years, it is ready for tasting.

TASTING

Color
Pale pink with reflections of light gold. Its small “pink pearls” (perles rosas) slowly rise to the surface creating a characteristic crown.

Aroma
The first impression is very pleasant, with refined and light aromas, lingering in character with a varietal and ageing.

Flavor
In the mouth it is agreeable, full and creamy, with an elegant and lengthy finish.

Finish
Greatly balanced, refined and long-lasting.

Enjoyment
Adequate for any time of the day, as an aperitif or to accompany food as it has a body for strong-flavored dishes.
