CAVA PERLES BLANQUES

COMPOSITION
Pinot Blanc de Noirs, Chardonnay

PRODUCTION
After harvesting and carefully selecting by hand the Pinot grapes in boxes, to avoid damage to the berries and possible softening during transportation to the cellar, the harvest is cooled to a very low temperature before being lightly steeped and softly pressed in the pneumatic press. The Chardonnay grapes for cava are harvested with good level of acidity and optimal balance. Both varieties are fermented in stainless steel at a very low temperature to preserve as much as possible their aroma. Part of the Chardonnay is fermented in aged oak barrels. Once the coupages have been done and the wine base is stabilized, the tirage takes place followed by the second fermentation in bottles. After ageing for more than 24 months, it is ready for tasting.

TASTING

Color
Pale, luminous yellow, with reflections of yellow and green. Its small “white pearls” (perles blanques) rise slowly forming a string of playful designs ending in the crown.

Aroma
Peculiar and pleasant aroma, powerful and refined, the first scent is delightful and surprising, the second is inviting, with subtle and lingering aromas of fruit, varietal and hints of ageing.

Flavor
In the mouth it is personal, creamy, lively and pleasant. The after taste is persistent and complex; there are clear indications of ageing in lees and a slight hint of its time in oak barrels.

Finish
Refined and splendid, the palate is powerful with a good balance, flavorful with a lengthy aromatic persistence. It is a cava of unparalleled quality and refinement.
