CLOS DEL PI

 

Composition: Cabernet Sauvignon, Merlot, Syrah.
Elaboration process: At the "Vinya del Pi" vineyard, the Cabernet grape harvest takes place at the end of October, and the grapes are soaked and fermented for 21 days, until no sugar remains.
Following malolactic fermentation, the wine is aged in casks made of French oak for 14 months. Once bottled, the wine continues to mature in our cellars until it is sold.
Colour: Cherry-red colour with slight traces of slate.
Nose: Strong, lingering, fine bouquet. Vintage aromas stand out, mixed with hints of fruit, attributable to the over-ripening of the grape. Spices and typical aromas from the Mediterranean undergrowth can also be noted.
Taste: The initial impression is of the smoothness of its body, followed by a lingering, oily, tannic structure. The flavour in the palate blends varietal and spicy tinges that are in perfect harmony with the bouquet.
Overall: A great wine with an excellent bouquet. Well structured with an impressive aroma and lingering flavour. Original in the area.
Consumption: To be kept for 20 years or more. Discover the potential offered by this wine when combined with a wide variety of Spanish and Mediterranean dishes.
